Position: Baker
Location: Cotogna — San Francisco, CA

Cotogna, the sister restaurant to Quince, is seeking a skilled and dedicated Baker to join our team.

Rooted in Italian tradition and driven by seasonality, Cotogna’s menu is built around handmade pastas, wood-fired dishes, and a daily bread and pastry program that reflects both precision and simplicity. We are looking for a baker who shares a passion for craft, consistency, and working with exceptional ingredients.

Responsibilities:

• Prepare and execute daily bread production (including naturally leavened breads, focaccia, and specialty loaves)
• Assist with laminated doughs, pastries, and seasonal baked goods
• Maintain fermentation schedules and dough management with accuracy and care
• Ensure consistency, quality, and cleanliness across all baking processes
• Collaborate with the culinary team to support service and evolving menu needs

Qualifications:

• 1–3+ years of professional baking experience (restaurant or artisan bakery preferred)
• Strong understanding of fermentation, dough handling, and baking techniques
• Ability to work early mornings and maintain a consistent production schedule
• Highly organized, detail-oriented, and team-driven
• A genuine interest in Italian cuisine and seasonal cooking
